Receta de croquetas de pollo y quinoa – Chicken and quinoa croquettes recipe

 

Estas croquetas no llevan leche ni huevo 😉

 

Ingredientes:

– 1 muslo + contramuslo de pollo, deshuesado y previamente cocido.

– 200g de caldo de pollo y verduras

– 70g de harina de trigo

– 25g de quinoa

– 1/4 de cebolla

Pan rallado para rebozar, sin sal

Aceite de oliva virgen extra

 

Pasos:

1. Poner la quinoa en un colador y lavarla muy bien bajo el grifo, removiendo con la mano. Hasta que el agua salga transparente.

2. Cocer la quinoa en el doble de agua, a fuego medio y tapada. Se cuece en unos 15 – 20 minutos para que esté blandita.

3. En una sartén, poner a sofreír la cebolla, cortada pequeñita, con un poco de aceite de oliva.

4. Cuando la cebolla esté transparente, añadir el pollo, desmenuzado pequeñito también, y la quinoa ya cocida. Remover bien para mezclar los tres ingredientes. Cocer a fuego medio.

5. Añadir la harina y remover muy bien, para que se mezcle con el resto. Cocinar unos 5 minutos, sin parar de remover, para que no se queme.

6. Añadir el caldo y seguir removiendo, hasta que se forme una masa como la que veis en el vídeo.

7. Poner la masa en un envase y dejar reposar.

8. Formar las croquetas con las manos, o como os sea más fácil, y pasarlas por pan rallado.

9. Hornear a 250 grados hasta que se doren un poco.

 

Notas:

– Cuanto más dejes reposar la masa, incluso varias horas, y en la nevera, más fácil será formar las croquetas sin que la masa se pegue de las manos. De todas formas, yo solo la dejé enfriar un poquito, como 20 minutos, y las hice.

– No esperéis un color tostadito como cuando se fríen, quedan más blancas. Si las dejáis mucho tiempo puede que les quede una costra un poco más dura. Id mirándolas de vez en cuando.

– A mí no me hizo falta huevo para rebozarlas, sólo con pan rallado me quedaron bien.

– Quedan ricas de sabor, pero con una pizca de sal, para mí, estarían mejor! 😛

Notes:

– The more you let the dough, even several hours, and in the refrigerator, the easier it will be to form the croquettes without the dough from sticking to your hands. Anyway, I only let cool slightly, about 20 minutes, and I did.

– Do not expect a golden brown color and when fried, are whiter. If you leave too long can they stay a little more hard crust. Id watching them occasionally.

– To me I did not need to rebozarlas egg, bread crumbs only I were well.
