Receta de galletas de coco y zanahoria

 
Ingredientes:

– 2 huevos medianos
– 40 g de coco rallado deshidratado
– 50 g de zanahoria
– 50 g de copos de avena
– 1/2 cucharadita de levadura química
– 6 ciruelas pasas

 

Pasos:

1. Precalentar el horno a 200 grados.

2. Batir los dos huevos.

3. Procesar los copos de avena para convertirlos en harina. Puedes usar directamente harina de avena.

4. En un envase, mezclar la harina de avena con el coco. Remover bien. Añadir la zanahoria rallada muy fina y volver a remover para mezclar bien los 3 ingredientes.

5. Añadir los dos huevos batidos y mezclar hasta formar una masa.

6. Con la batidora, picar las 6 ciruelas pasas sin hueso y añadirlas a la masa. Volver a mezclar todo bien.

7. Poner un papel de hornear sobre una bandeja, y con la ayuda de una cuchara, ir poniendo un poco de la mezcla y aplastarlo dándole la forma de galleta.

8. Meter en el horno precalentado a 200 grados durante 10 minutos o hasta que estén tostaditas.

 

Notas:

– No quedan muy duras, pero de todas formas dadlas a vuestro peque sólo si pensáis que las va a gestionar bien. Probadla primero vosotros.

– Yo uso las ciruelas pasas sin hueso de la marca DIA, que no traen azúcar ni aceites. Las podéis cambiar por dátiles, o no ponerlas. Son para dar un sabor un poco más dulce.

– El coco también es sólo coco rallado deshidratado, sin nada más. Lo compré en Lidl.

– Podéis cambiar las ciruelas por dátiles. 

– Recordad introducir primero a vuestro bebé todos los ingredientes por separado para descartar alergias.
